Packed full of nutrient-dense ingredients, these cookies will boost flagging energy levels.

  • 1 tbsp milled flaxseed
  • 2 tbsp water
  • 30g sesame seeds
  • 85g oats
  • 30g coconut sugar
  • 1 tsp baking powder
  • ½ tsp sea salt
  • 40g medjool dates, chopped
  • 125g light (hulled) tahini, well stirred
  • 1 tsp pure vanilla extract
  • 2 tbsp coconut blossom syrup or maple syrup
  1. Preheat the oven to 180°C and grease and line a baking sheet.
  2. In a small bowl combine the flaxseed and water. Set aside to thicken.
  3. Place the sesame seeds, oats, coconut sugar, baking powder, salt and dates in a medium bowl and stir to combine.
  4. Place the flaxseed mixture, tahini, vanilla extract and syrup in a large bowl and stir until thoroughly combined.
  5. Add the dry ingredients to the wet ingredients and mix well. Space 10-12 spoonfuls of the mixture well apart on the baking sheet and press down lightly into circles. Bake for 10-12 minutes, or until lightly browned. Leave on the sheet for 5 minutes before transferring to a wire rack to cool completely.
